It is the first day of my holidays and I wanted to wish you a Happy Festive season, a Merry X-mas and a Wonderful Year to come!

I also wanted to share a little festive treat with you- no stress no bake and simple to make… and no gluten, dairy or refined sugar either… Hope you like it..

NO BAKE FRUIT AND NUT SQUARES OR BARS

Ingredients:No Bake Fruit and Nut Bars

  • 1/2 cup Walnuts
  • 1/2 cup almonds
  • 1 cup rolled oats/ GF oats
  • 1 cup chopped mixed dry fruit (apricots, prunes, figs, raisins, de-seeded dates etc)
  • 1 cup almond butter
  • 1/2 tsp cinnamon powder
  • Up to 2 Tbsp maple syrup or honey (optional)
  • A pinch of sea salt

Method:

Pulse nuts coarsely in food processor or blender.

Add oats and pulse a few more times.

Place in a large bowl and add remaining ingredients. Stir till combined well.

Line a 20 by 20 cm baking tin and press the mixture in it evenly.

Refrigerate for 2 hrs.

Remove from tin and cut into squares or bars.

Store in fridge in an airtight container.
